Japan is launching a new high-speed bullet train, or shinkansen, extension on Saturday that will make an under-the-radar prefecture far more accessible to travelers. The new train will pass through the city of Fukui, the town of Awara and other places guidebooks rarely mention, before reaching the port town of Tsuruga, adding some 78 miles to the Hokuriku Shinkansen's existing Tokyo-to-Kanazawa service. NEW YORK (AP) — David Bouley, the award-winning and frenetic chef whose idiosyncratic haute cuisine and crusty breads pleased critics and the public during a career chasing sleek deliciousness, has died. Bouley died of a heart attack Monday at his home in Kent, Connecticut, according to Lisa Queen, his literary agent. Other restaurants he worked in include Danube, Bouley Bakery, Upstairs at Bouley, Bouley at Home, Secession and Brushstroke, a collaborative effort with the Tsuji Culinary Institute in Osaka, Japan. Danube and Bouley Bakery each earned two Michelin stars. The restaurant Bouley — which famously had a foyer filled with apples — closed in 2017 after 30 years and several location changes, earning a three-star from the New York Times the year previously.

Most of the other students enrolled in the Japanese Culinary Intensive course are professionals. They are local or from abroad, just brushing up on skills or adding to their repertoire. My bench mate works charter yachts out of Australia. On the topic of kaiseki Mr. Hiro grows briefly philosophical, noting that it’s a lifetime practice and thus approaching the ineffable.

“After China's ban on Japanese seafood, we are seeing more customers buying not only Fukushima fish but also Japanese seafood in general to support the industry." Despite the wastewater discharges, auction prices at Fukushima fish markets have remained stable — or even occasionally higher than normal. While individual consumers favor ordering fish by mail and shopping at seafood markets, prefectural government cafeterias have started serving Fukushima seafood for lunch. In Kyoto, a group of world-renowned Japanese “Kaiseki” cuisine chefs, will develop menus that primarily use Fukushima fish starting early next year. “I wish I could sell more local fish,” Haga said.

The awards have been presented in the Windy City since 2015 and are set to remain there through 2027. Like last year, much of the 2023 show was focused on showcasing the new push for greater diversity. The James Beard Foundation has been mired in controversy over the past few years. Hong Kong CNN —World leaders attending the Group of Seven summit in Hiroshima have been treated to a belt-expanding tour of local gastronomical delights with a host of menus showcasing the best of Japanese fine dining. Leaders were also served sea bream with Japanese matsutake mushrooms, simmered stonefish and slipper lobster. Next came famously marbled beef sourced from Hiroshima – known as hiba beef – served alongside red sea urchin and eggplants, complemented by a selection of sparkling sake and red wine. For the main, they will be served with homegrown chicken and locally sourced mussels, according to the menu seen by CNN. And for those still hungry, Sunak and other world leaders will have plenty more opportunities to sample Japanese cuisine before they begin to depart from Sunday.
